LaPine Public LibraryKing, who has mastered all things domestic from raising pigs, sheep, and chickens to canning 450 pounds of pears, insists that no special skills are required to make tasty tamales. “A sturdy mixer is a good thing to have because mixing the masa by hand can be a beating (pun intended).” According to King, tamales are versatile, wholesome, and once mastered can be a wonderful addition to a home cook’s recipe box. “I think the best part about adding tamale making to your repertoire is that with very few ingredients and very little money you can make a delicious home cooked meal that can be eaten hot right from the steamer, cold the next day in a school lunch, or frozen for another time.”
